Jerusalem artichokes grated or very thinly sliced

oil-cured olives pitted and chopped

olive oil

lemon juice

sprinkling of coarsely ground cumin

Unusual and wonderful.

Directions

Grate or very thinly slice Jerusalem artichokes.

Mix with olives, olive oil, lemon juice and a sprinkling of cumin.
